Intermittent fasting (IF)

You are what you eat. Cooking & eating is one of the most important ingredients for my life, even though I believe “All you need is love.” Mito, my wife and soul mate, and I started the IF (Intermittent Fasting) diet about a year ago. Since then, we only eat dinner, one meal a day. I lost about 20% of my body weight and became much healthier. There are many scientific reasons to explain why IF works well for me. Moreover, unexpectedly, I gained an extra 2-3 hrs per day by not considering and preparing two more meals (breakfast and lunch) a day, and eating, dishwashing, and glossary shopping as well. Instead, by using this extra 2-3 hours per day, I could feel various beauties in this world to appreciate them, making a delicious cappuccino for my wife, enjoy Bossanova music, dance Salsa, read self-help books, paint watercolor, email to my friends, and help others. Since we can focus only on dinner, we can pay more attention to fresh ingredients and molecules we take (I am a PhD chemist), novel recipes and unique process, the delicate sensation of heat, smell, and taste. Tonight, we enjoyed Italian dishes together with a perfect Nebbiolo from Piemonte, Italy.
